Meet Mikey, who joined the Quarry Oaks team in March 2025 as executive chef. With 16 years of culinary experience and a passion for creating food, he brings a wealth of talent and creativity to the kitchen. His journey began at Le Cordon Bleu in Scottsdale and has taken him through cities like Fort Worth, Denver, and Phoenix, shaping his approach to cooking along the way.

As executive chef, he blends French technique with Midwestern flavors to craft dishes that are simple, flavorful, and visually appealing, and he’s especially excited about the Dynamite burger and whoopie pie on the new menu. What drives him daily is the joy of making guests happy and the challenge of balancing quality, cost, and speed.

47b is the aggregate material mined during the 1950’s from the pit Quarry  that golfers hit over the 15th hole.

This material was hauled to Lincoln via train and used in the paving of the Lincoln Air Base runway at the start of the Cold War.
